Potato Lentil Burgers -- (Potato Cookbook, Australian Women's Weekly)

1 c red lentils
1 tbsp olive oil
2 medium onions, chopped
3 cloves garlic, crushed 1 1/2 c cold mashed potato (need to cook 2 large potatoes)
2 tbsp chopped fresh cilantro
1 tbsp dijon mustard
1/2 c grated parmesan cheese
1 egg
1 1/2 c breadcrumbs
vegetable oil for shallow frying

Add lentils to pot of boiling water, boil, uncovered, about 10 minutes or until tender, drain. Heat oil in pan, add onions and gralic, stir over heat until onions are soft.

Combine lentils, potato, onion mixture, cilantro, mustard, cheese, egg and breadcrumbs in bowl; mix well. Shape mixture into patties (depending on the size of patties can make 14); refrigerate patties until firm. Shallow-fry patties in hot oil until lightly browned on both sides and heated through; drain.

Makes 6-14.
