4 medium old potatoes, peeled
1 medium carrot
1 large onion, chopped
1 c frozen peas
1 c shredded cabbage
1 broccoli floret, chopped
4 green onions, chopped
1 red pepper, chopped
1 c mushrooms, thinly sliced
30g butter
2 tbsp vegetable oil
Boil, steam or microwave potatoes until tender; drain, mash, cool. Cut vegetables into 2 cm pieces. Cook vegetables in pan of boiling water until tender; drain. Combine mashed potato with all vegetables in bowl; mix well.
Heat butter and oil in frying pan; add vegetable mixture, press down with spatula, cook, without stirring until browned underneath. Cut into serving pieces, using spatula, turn pieces over, cook until browned on other side.
Serves 6.
