Garden Calzones -- (Diet for a New World by John Robbins)

2 tbsp olive oil
1 medium onion
1 bunch broccoli, trimmed and finely chopped
2 c chopped mushrooms
1 medium red bell pepper, seeded and chopped
4 garlic cloves, minced
any other vegetables you like
1 bunch fresh spinach or 1 pkg frozen spinach thawed and excess water removed
1/2 c chopped fresh cilantro
1 recipe Pizza Dough
1 recipe Tofu "cheese" sauce

In a large skillet, heat the oil over medium heat. Add the onion, broccoli, mushrooms, red pepper, and garlic and cook until the onion is softened, about 5 minutes. Add the spinach and cook until wilted. Remove the lid and cook until the excess liquid has evaporated. Stir in the cilantro and Tofu "Cheese" Sauce.

Preheat the oven to 350F. Lightly oil a baking sheet and dust with cornmeal.

Flour hands and rolling pin. Divide the dough into 4-16 balls, depending on the size of the calzone you with to make (4 = 10" calzones; 8 = 8" calzone; 16 = 4" calzone). Roll each ball into a circle 1/8 inch thick.

Divide the vegetable filling evenly among the dough circles, placing it in the centre of each dough circle. Fold the dough circles in half over the filling. Roll up the edges to form a 1-inch thick border on each calzone and flute. Carefully transfer the calzones to the baking sheet.

Bake until lightly browned, 15 to 30 minutes. Serve hot or at room temperature. Can also be made ahead and frozen!!
