Lasagna pizza -- (from Sophie Kay's Pasta Cookery, HP Books)

5 qts water
vegetable oil
20 lasagna noodles, uncooked

shredded soya loaf mozzarella
Classico pasta sauce
mushrooms, sliced
onion or green onion
veggie chili dogs, thinly sliced
red pepper
refried beans

Bring water to a boil in a heavy 7-qt pot or Dutch oven. Add oil. Gradually add lasagna noodles, being sure water continues to boil. Cook noodles uncovered until tender but firm, stirring occasionally. Drain. Rinse with cold water. Drain again. Butter a 15" x 10" jelly roll pan or rimmed baking sheet. Arrange 10 cooked lasagna noodles in pan. Sprinkle with ¾ c cheese. Cover with remaining 10 noodles. Spread pasta sauce evenly over noodles. Place pizza in cold oven. Set temperature control at 350°F. Bake 10 minutes. Remove from oven. Arrange ingredients over pizza. Sprinkle with remaining cheese. Return to oven. Bake until cheese melts, about 15 minutes.

Makes 1 large pizza.
