Spicy pasta -- (from Jocelyne Soulodre)

1 - 2 lbs pasta of your choice (spaghetti, spaghettini, spirals, rotini, bows, etc.)
¼ - ½c olive oil
10 - 15 garlic cloves, minced
4-6 chipotle peppers and sauce (depending on level of heat)
½ - 1 c prepared spaghetti sauce
1 c parmesan cheese

Boil enough water to cook desired amount of pasta. Cook pasta of choice as per directions. Drain and set aside.

Heat oil at low setting add garlic, cook simmering add chipotle peppers. Cook 10 - 15 minutes, until oil has become flavored by the peppers. Discard peppers. and remove from heat.

Add pasta to oil mixture and toss. Add spaghetti sauce and parmesan and toss lightly to coat.

Serve in bowls. with warm sourdough bread or foccacia bread.

Serves 4-8.
