Black Bean Burgers -- (from Vancouver Sun, August 25, 1995)

3 (398 ml) cans black beans, rinsed and drained
1 tsp cumin
2/3 c onion, finely chopped
3 tbsp roasted sesame seeds
¼ c red bell pepper, finely chopped
1 tbsp lime juice
1 tbsp jalapeno pepper, finely chopped
½ tsp pepper
~ 2 tbsp vegetable oil

In a large bowl, bash beans until most are smooth, leaving some of them intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice and pepper; mix well. Divide mixture into 8 equal portions and shape into patties about 3½" in diameter.

In a large heavy frypan, heat oil over medium-low heat. Cook patties, in batches for 8-10 minutes or until lightly browned, turning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.

Makes 8 burgers.
