Tofu burrito grande -- (from Sunrise Tofu, Volume 4)

½ medium onion, diced
pinch of cumin & paprika
1 carrot, diced
2 tsp chili powder
1 pepper, diced
½ c salsa
1 c corn, frozen or canned
½ tbsp cornstarch in ¼ c water
1 tbsp vegetable oil
flour tortillas
firm tofu, cut into ¼" cubes
1 c cheese of your choice, grated
½ tsp cayenne

Optional: sour cream, guacamole, salsa, sliced olives for garnish

Heat oil in skillet over medium-high heat. Sauté vegetables for 3 min. Stir in tofu mixture, spices and salsa. Cook for 3-5 min. or until evenly hot. Add cornstarch mixture and stir until sauce is thickened. Spoon mixture into warmed tortilla. Top with cheese and other garnishes and roll each tortilla.
