Angie's Famous Veggie Chili -- (from Carys)

1 can tomatoes (mashed)
2 large garlic cloves, crushed
1 large tin tomato juice (V8)
1 large onion, diced
1 c bulgar wheat
3 tbsp olive oil
1 bell pepper, diced
salt & pepper
1 eggplant, diced
3 tsp coriander & cumin
2 carrots sliced
2 tsp chili powder
1 can kidney beans
1 can brown beans
1-2 dashes cayenne
**Add any other desired/seasonal veggie**

Fry garlic and onion in oil, 10 minutes. Add carrots; sauté then add pepper, eggplant and other veggies. Sauté ~ 10 minus. Meanwhile boil 2 c of tomato juice; add bulgar and let expand 10-15 minutes. After veggies are sautéd, add expanded bulgar and juice, canned tomatoes and remaining tomato juice. Stir the whole mess together. Add more tomato juice to desired thickness - bulgar will expand even more during cooking.

Add beans and spices. Bring to a boil, stirring constantly, then reduce heat to low and simmer covered for minimum of 1 hour (the longer, the better). Dilute with water or tomato juice at any time if it gets too thick. USE A LARGE POT!!!
