Grilled Marinated Salmon -- (from Diane)

1 salmon fillet, skin on
¼ c soy sauce (low sodium)
¼ c dry sherry or sherry vinegar
2 tbsp rice wine vinegar
2 tbsp sunflower oil
1 tbsp sesame oil
3 tbsp green onion or shallots, chopped
1 garlic clove, chopped

Blend all ingredients except for salmon. Marinate the salmon fillet overnight. Reserve leftover marinade for basting.

Oil barbecue grill well and place over high heat. Lay salmon on grill and cook for about 4-5 minutes on each side, basting well. Salmon should be just opaque. Decorate with lemon wedges and sprigs of cilantro, parsley or fresh dill. Serve hot or cold.

Variations: Marinade 4 large purple onions sliced into thirds and grill - should become a dark crispy golden.
