Sumptuous salmon salad -- (from Simply HeartSmart Cooking)

1 lb asparagus, cooked and diced
1 lb potatoes, cooked and diced
2 c fresh or frozen corn niblets
2 tomatoes, seeded and diced
4 c chopped ruby-tipped lettuce
1/3 c chopped fresh basil or parsley
6 green onions, diced
2 cans (7.5 oz) salmon, well-drained and broken into chunks

Dressing
1 garlic clove, minced
salt to taste
½ tsp pepper (or more to taste)
¼ c red wine vinegar
¼ c olive oil

Combine the asparagus, potatoes, corn, and tomatoes in a large mixing bowl. Add the lettuce and herbs, and toss well. Add chunks of salmon, but do not toss together yet. Combine garlic, salt, pepper and vinegar for the dressing. Whisk in olive oil. Combine dressing gently with salad. Taste and adjust seasoning if necessary. Serve in a large bowl or mound on a plate to serve.
