Onion bruschetta and cheese -- (from Canadian Living, August 1997)

1 small red onion, sliced ¼"
2 tsp extra-virgin olive oil
pinch salt and pepper
3 tbsp cream goat cheese
1 tbsp pesto
4 slices baguette, grilled

Place onion slices on greased grill over medium-high heat. Brush with 2 tsp olive oil; sprinkle with pinch salt and pepper. Cook, turning once and brushing with 1 tsp more oil, for 10 minutes or until tender but still hold shape. Let cool slightly.

Stir cream cheese, pesto; spread over 4 slices grilled baguette. Top with onions.

Makes 4 servings.
